These garlic chive scrambled eggs are the definition of quick and easy! The simple addition of aromatic garlic chives takes our Cantonese scrambled eggs to the next level. It all comes together in just 10 minutes!

Even though scrambled eggs are typically associated with breakfast in American culture, my family would actually make this dish for breakfast, lunch, and dinner. It would serve as a delicious side dish among some rice and other protein or veggie dishes.

What are garlic chives?

Garlic chives, also known as Chinese chives, are an herb in the onion family that have a garlic flavor. They are much more flavorful compared to regular chives.

When eaten raw, they provide a pungent garlicky flavor that will linger on your tongue and give you strong garlic breath — I speak from experience! We typically enjoy them cooked lightly and simply (the flavor mellows out), like in stir-fries or dishes such as these garlic chive scrambled eggs.

Garlic Chive Scrambled Eggs

Aromatic garlic chives are the perfect pairing for these soft scrambled eggs — done in just 10 minutes, and can be served for breakfast, lunch, or dinner!

  • 5 stalks garlic chives aka Chinese chives
  • 5 large eggs
  • Neutral oil for cooking
  • Salt



Prepare the ingredients

  • Wash the garlic chives, then chop them into 1 inch pieces. Set aside.

  • To a bowl, add the eggs and all the seasoning. Beat very thoroughly for 1-2 minutes.
    5 large eggs, 1/4 tsp salt, Few dashes of white pepper, 1/8 tsp chicken bouillon powder, 1/8 tsp sugar, 1/4 tsp sesame oil

Cook the scrambled eggs

  • Preheat a pan on medium heat. Add 1 tbsp neutral oil, then the garlic chives.

  • Cook the garlic chives for about a minute, or until they’ve softened just slightly but are still bright green.
  • Season the garlic chives very lightly with salt, then push them to the side of the pan. Add the beaten eggs to the pan.
  • With a spatula, slowly stir the eggs in small, circular motions to create small, fluffy curds. Gradually incorporate the garlic chives back into the eggs.
  • Finish cooking the eggs to your preference. I prefer them to be a soft scramble, so this only takes about another minute of cooking, but cook them for an extra minute or two for a harder scramble. Enjoy!
